There are some apps that let you do a floor plan if you pay. There may be some free version. There is the underrated (seems like its ad latent competition by the same name gets more google search results) open source WiFi Analyzer for Android. Note that Android may limit wifi scanning to save power.

Not iOS: Apple locked down the operating system years ago and does not allow it, and iOS is simply not an operating system for an l33t hax0r (or whatever they call themselves these days) or anyone wanting to do detailed WiFi analysis.
