InsTuner is great. Not only will it tell you what notes you’re hitting, but it’ll show you on a spectrum what exact pitch you’re at. It also has a tone generator for if you want to hear what a specific note sounds like.

Ok, after searching around for a while (including the apps in the sidebar), I still have not found the app I am picturing in my head. It seems simple to me - flash cards which train your ability to identify notes quickly.

Waves CR8 has become my favorite sampler in part because it has pretty good pitch detection. I can set it to the correct note with a single click... It's not really a percussion sampler though, so maybe not so great for drums.
