Scrivener is often touted as the best novel writing software out there, and I'm inclined to agree if you're in Apple's ecosystem.

Depends on the type of book. I've used Word, Google Docs, Apple Pages, Scrivener, InDesign, Affinity, Vellum, Atticus, WordCrusher (now Push Button Book Formatting), KKBC, Kindle Create, and if you go way back I've built ebooks by hand.

Some folks use virtual machines or MacInCloud to run it. If you're publishing on KDP and want to make your book look amazing without going crazy over formatting, Vellum's definitely worth a look.
